Cubo all'arancia

Non uso molto gli agrumi in cucina, nè per il dolce nè per il salato. Ieri sera però ero alla ricerca di un dolcino che potesse andare bene per la colazione: ultimamente ho un pò la fissa.....devo avere qualcosa di buono e fatto in casa per colazione, am non volgio cose "pasticciate"! Ho fatto un'altro dolce di cui vi dirò!
Ma dicevo che ero alla ricerca e mi è capitato tra le mani un libro che ho da un pò ma di cui non ho mai realizzato niente, ed è "Il grande libro dei dolci" di Lisa Biondi Ed. Il Mosaico!
E' un libro molto accurato, con ricette spiegate passo passo e inoltre tutte corredate delle tecniche di decorazione e presentazione dei dolci.
Prima o poi mi cimenterò in qualcosina....nel frattempo da uno dei dolci presentati ho estrapolato quella che rappresenta la base del dolce stesso...sono stata attirata da questo dolce all'arancia e mi è inoltre venuto in mente che avrei così potuto partecipare al concorso "Ci piace un succo" indetto da Giovanna di Lost in Kitchen per festeggiare il suo primo blog-compleanno!!


Vi riporto la ricetta con gli ingredienti originali e tra parentesi le mie modifiche (apportate per adattarle a quello che avevo a disposizione)


Per uno stampo quadrato da circa 18 cm di lato:


300 gr di mandole sgusciate e tritate (100 di mandorle, 70 di noci e 130 di farina di farro)
2 arance grosse e succose
170 gr di zucchero (150 gr di zucchero grezzo di canna)
6 uova
1 bicchierino di liquore all'arancia (stessa quantità di rum bianco)

In una terrina montate i tuorli con lo zucchero fino ad ottenere un composto chiaro e spumoso. Aggiungetevi, poco alla volta, le mandorle (mandorle, noci e farina) e il succo d'arancia alternadoli e mescolando delicatamente con un cucchiaio di legno. Unite quindi il liquore e le scorze delle arance grattugiate. Aggiungete infine, gli albumi montati a neve ben ferma e incorporateli delicatamente al composto con una frusta a mano.
Versate il composto (che sarà piuttosto liquido) nello stampo imburrato e infarinato (o rivestito di carta forno, o meglio ancora in silicone) e fate cuocere in forno preriscaldato a 180° per 40-50 minuti o fino a quando infilando uno stuzzicadente del centro risulterà asciutto (nel mio forno ci sono voluti 60 minuti). Se dovesse colorire troppo in superficie copritelo con un foglio di stagnola.


Il risultato è un dolce leggermente umido all'interno, molto morbido e profumatissimo....mi è proprio piaciuto! In più è velocissimo da fare e non contiene grassi....meglio di così!!
